The balance behind a sour
A sour-style cocktail balances a spirit or liqueur with citrus and a sweet ingredient. Whiskey Sour, Vodka Sour, Pisco Sour, and Amaretto Sour show how changing the base changes the drink. Clover Club adds raspberry syrup to gin and lemon; Bee's Knees uses honey syrup. This selection includes both drinks named Sour and related citrus classics.
Foam is optional to the family, not to every recipe
Some recipes here specify egg white; others, such as Daiquiri, Gimlet, White Lady, and Sidecar, do not. Follow the individual ingredient list and method instead of adding egg white to every sour. Fresh citrus and careful measurement help keep sweetness and acidity in balance. If you need to avoid raw egg, choose one of the recipes without it or use an appropriate pasteurized product according to its instructions. Chill the serving glass and shake the cocktails as directed.
